6 Authentic Indonesian Fried Rice Recipe ( Nasi Goreng ). Although it is not often cooked in a private home for local consumption, nasi goreng is a very popular street food treat for Indonesian people and is found almost everywhere. The dish is often topped with a fried egg.

Indonesian Fried Rice

Fried Rice with Noodles (Nasi Goreng Mawut) ingredients


  • 4 Tbsp vegetable or coconut oil
  • 100 g chicken thighs, deboned, skinned, and cut into 1-cm cubes
  • 2 Tbsp meat spice blend
  • 100 g prawns (shrimps), peeled, cleaned, deveined and cut into 1-cm cubes
  • 2 Tbsp seafood spice blend
  • 4 Tbsp vegetable or coconut oil
  • 50 g white cabbage, sliced
  • 20 g large red chilies, halved, seeded and sliced
  • 3-5 bird’s eye chilies, finely sliced
  • 1 Tbsp chili sauce
  • 2 Tbsp salty soy sauce (kecap asin)
  • 50 g shiitake mushrooms, sliced
  • 3 eggs, blended thoroughly
  • 300 g rice, cooked and cooled
  • 300 g egg noodles, boiled and cooled
  • 30 g spinach, cleaned and roughly sliced
  • 30 g leek or spring onions (scallions), sliced
  • 20 g celery leaves, sliced
  • 2 Tbsp finely sliced lemon basil (kemangi)
  • 2 Tbsp fried shallots
  • salt, to taste

How to cook


  1. Marinate chicken and prawns with respective spice blends.
  2. In separate frying pans, quickly stir-fry chicken and prawn for only 1 minute in very hot oil. Set aside and keep warm.
  3. Heat 4 Tbsp oil in a wok or large frying pan (preferably nonstick). 
  4. Add cabbage and chilies and fry over high heat for 1 minute.
  5. Add chili and soy sauce and fry until almost all the liquid has evaporated.
  6. Add shiitake mushrooms and fry for 1 more minute.
  7. Add eggs and continue to fry until eggs are scrambled and almost cooked.
  8. Add rice, mix well and fry for 1 minute.
  9. Add noodles, mix well and fry again for 2 more minutes over high heat.
  10. Add spinach, leek, celery and lemon basil, mix well and fry 1 more minute while continuously mixing.
  11. Add fried shallots and season to taste with salt.

Red Fried Rice Recipe 

Nasi goreng merah

Serves: 2

Ingredients

600 g of cold white rice
150 g chicken leg thigh fillets
1 stalk of onion
4 tablespoons cooking oil
3 cloves of garlic, chopped
200 g of medium-sized shrimp, peeled
3 eggs, beat
4 tablespoons of tomato sauce
1 teaspoon salt
½ teaspoon ground pepper

Complement

Raw pickles (cucumbers, cayenne peppers)
1 lime, sliced

How to cook


  1. Describe rice grains with a fork so it does not clot, set aside. Slice the chicken fillets into small pieces or one size bribe and slice transversely 1 cm leeks, set aside.
  2. Heat cooking oil in a frying pan, saute garlic until fragrant. Add chicken and shrimp, stir until it changes color.

  • 4 cayenne peppers
  • 5 red onions
  • 2 cloves of garlic
  • 1/2 tsp cooked shrimp paste
  • 2 tablespoons soy sauce
  • 2 teaspoons of salt

How to make


  1. Puree red chili, cayenne, onion, garlic, and salt.
  2. Heat the oil and saute the spices until cooked.
  3. Add rice and cook until smooth.

Padang Fried Rice

  • White rice - 1 serving
  • Shredded boiled chicken - 40 grams
  • Shallots, thinly sliced - 5 grains
  • Garlic, thinly sliced - 2 cloves
  • Curly red chili, puree - 3 pieces
  • Big red chili, puree - 1 piece
  • Salt - 1/2 tsp
  • Granulated sugar - 1/4 tsp
  • Flavoring - 1/4 powder
  • Curry powder - 1/2 tsp
  • Sweet soy sauce - 2 tablespoons
  • Celery, sliced - 1 stick
  • Oil, for sauteing - to taste

How to make


  1. Saute onion and garlic.
  2. Add the chili that has been mashed, sautéed until the fragrance is cooked.
  3. Add shredded chicken, then add rice, stir well.
  4. Season with salt, sugar and flavoring powder. Stir in the rice.
  5. Shortly before lifting, add curry powder and celery leaves, stir again.

Note
Use rice that is not too fluffier for better results.
Use just a little oil because Padang fried rice does not look greasy.

Seafood Fried Rice

  • 600g of white rice
  • 150g of shrimp, peeled and split back
  • 200g of squid, cut into 1 cm round
  • 3 spoon Sweet Soy Sauce
  • 1 teaspoon of salt
  • ½ teaspoon of sugar
  • 1 scallion, cut 1/2 cm
  • 1.5sdm fried shallots
  • 50g of cucumber pickles
  • 2 tdm vegetable oil

Spice Blend


  • 3 large red chilies
  • 5 curly red chilies
  • 2 cloves of garlic
  • 8 red onions
  • 1 tomato
  • 1.5 tsp shrimp paste, burned

How to make


  1. Heat the oil. Stir-fry the spices until fragrant. Add shrimp and squid. Stir until it changes color.
  2. Add white rice, Kecap Bango Manis, salt and sugar. Mix well until cooked.
  3. Add the chives and stir well.
  4. Fried rice is ready to be served with a sprinkling of fried shallots and cucumber pickles.


Goat Fried Rice

Ingredients


  • 3 plate of cold white rice
  • 350 gr mutton, cut into cubes
  • 1 small cinnamon stick
  • 1 tablespoon curry powder

Blended seasonings:


  • 8 red onions
  • 4 cloves garlic
  • 1/2 teaspoon cumin
  • 1/2 teaspoon fennel
  • 1 tablespoon coriander
  • 2 pcs cardamom
  • 5 pcs of cloves
  • 1 teaspoon pepper
  • to taste sweet soy sauce, salt, sugar, water

How to make it
